Absolute Best Chicken Enchiladas
Ingredients
2 - 8 ounce cans tomato sauce
4 chicken breasts, cooked and chopped
6 chopped green onions, divided
24 ounces sour cream
1 pound grated cheddar cheese, divided
24 medium size flour tortillas
4 small cans enchilada sauce
Instructions
Preheat oven to 350 F. In a large bowl, mix together chicken, 4 chopped green onions, sour cream and 1/2 pound of grated cheddar cheese. Take two 9x13 inch pans and pour one can of tomato sauce into each, tilting pans making sure to coat the bottom with sauce. Fill tortillas with approximately 4 tablespoons of chicken mixture and roll, place seam side down in pan with tomato sauce. Put 12 enchiladas into each pan. Pour two cans of enchilada sauce over enchiladas in each pan. Cover each pan with 1/4 cup grated cheese and bake for 20 to 30 minutes. Remove from oven and top with remaining chopped green onions. Makes 12 servings.
