Libby's Famous Pumpkin Pie
Ingredients
3/4 cup sugar
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
2 large eggs
15 ounces canned pumpkin
12 ounces evaporated milk
1 unbaked 9 inch pie shell
Instructions
Preheat oven to 425 F. Mix sugar, cinnamon, salt, ginger and cloves in small bowl. Beat eggs in large bowl and mix in sugar-spice mixture and pumpkin. Gradually stir in evaporated milk. Pour into pie shell. Bake for 15 minutes at 425 and then reduce to temperature to 350 F. Bake for 40 - 50 minutes or until knife inserted near center comes out clean. Cool on wire rack for two hours and then serve or refrigerate. Serve with whipped topping. Yields 8 servings.
