Oven Roasted Red Potatoes
1 1/2 pounds small, new red potatoes
1/4 cup Extra Virgin Olive Oil
4 cloves garlic, crushed
1 teaspoon dried rosemary
Preheat oven to 350 F. Quarter the new potatoes. In a large bowl mix the oil, garlic and rosemary. Add the potatoes to the bowl and toss well. Transfer the potatoes to shallow baking dish and roast for 30 minutes or until potatoes are tender. Makes 6 servings.
