Refried Beans
Ingredients
2 tablespoons olive oil
1 onion, chopped
4 cloves garlic
4 cups pinto beans, cooked
1 cup chicken broth
1/2 teaspoon cayenne pepper
3/4 teaspoon seasoning salt
juice of half a lemon
1/2 cup cheddar cheese, grated
1 teaspoon cumin
Instructions
In a large pan, saute onion and garlic in olive oil. In a separate bowl add 1/3 of the bean mixture and mash them with the back of a spoon until smooth. Add 1/3 cup of the chicken broth to the beans and stir together. Repeat this process until all beans and chicken broth have been used. Slowly add bean mixture to the large pan. Add cayenne pepper, salt and lemon juice to beans. Stir all ingredients together and simmer. Add grated cheese. Makes 6 servings.
