Aunt Evelyn's Meatloaf
Ingredients
1 1/2 lbs ground beef
1 tsp salt
1/4 tsp black pepper
1/2 cup bread crumbs
1/2 cup oats
1/4 cup ketchup
1/2 cup onion, chopped
1/4 cup bell pepper, chopped
1 cup grated Cheddar Cheese
1 large egg, beaten
1/3 cup milk
1/4 cup ketchup
1/4 cup BBQ sauce
1 tbsp Cider Vinegar
1/4 tsp Worcestershire Sauce
2 tbsp brown sugar
Instructions
Preheat oven to 350 F and grease a 9 x 5 loaf pan. Combine first eleven ingredients together in a large mixing bowl and mix thoroughly until combined. Press mixture into prepared pan and make an indentation along top center of loaf. In a small bowl, whisk ketchup, BBQ sauce, Cider Vinegar, Worcestershire Sauce and brown sugar until well combined and smooth. Cover top of meatloaf entirely with topping. Bake, uncovered, for 60 to 75 minutes or until meat is no longer pink. Let stand 15 minutes before slicing. Makes 6 servings.
