Coconut Banana Bread
You can substitute plain Greek yogurt for the sour cream and use 3 egg whites instead of the 2 eggs to make this healthier. The coconut delivers a crunch in this bread that makes it one of my favorites.
Ingredients
3 large ripe bananas
1/2 cup brown sugar
1 teaspoon vanilla extract
2 large eggs
2 tablespoons olive oil
1 3/4 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 cup sour cream
1/4 cup orange juice
3 tablespoons milk
1/2 cup & 2 tablespoons coconut, divided
Instructions
Preheat oven to 350 F. Grease a 9x5 inch loaf pan. In a large mixing bowl, combine bananas, brown sugar, and vanilla extract, mixing until bananas are mashed. Add eggs, then oil, mixing together until smooth. In a medium bowl, combine flour, baking powder, and baking soda, sifting until well combined. Slowly add to banana mixture, combining until moist. Next add sour cream, orange juice, and milk. Lastly, fold in 1/2 cup of coconut into the batter and then spread into prepared loaf pan. Sprinkle 2 tablespoons of coconut on top of bread, then bake for 1 hour or until a toothpick comes out clean and the bread is golden brown. Makes 12 servings.
