Slow Cooker Cream Cheese Chicken Chili
Ingredients
2 boneless chicken breasts
15 oz can black beans
15 oz can corn
10 oz can Ro-Tel tomatoes
1.13 oz package Ranch Dressing Mix
1 teaspoon cumin
1 tablespoon chili powder
1 teaspoon onion powder
8 ounces cream cheese
Instructions
Drain and rinse black beans. Place chicken on bottom of slow cooker, then pour out whole can of corn and Ro-Tel tomatoes in cooker. Add add black beans and top with dressing mix and seasonings Cut up cream cheese and place on top of mixture. Cover with lid and cook on low for 6 to 8 hours. When cooked, stir cream cheese into chili and use two forks to shred chicken. Makes 6 servings.
