This recipe can be easily doubled to feed a larger crowd.
1/2 cup mayonnaise
1 tablespoon Creole mustard
1 tablespoon ketchup
1 teaspoon Cajun seasoning
1 teaspoon fresh parsley, minced
1 can Crescent roll dough
12 ounce package Andouille Sausage
1 tablespoon water
Preheat oven to 350 F. Line a rimmed baking sheet with parchment paper and set aside. Combine mayonnaise, mustard, ketchup, Cajun seasoning and parsley in a small bowl and refrigerate until ready to use. Cut sausage into 24 equal pieces. Unroll crescent dough and cut each triangle into 3 small triangles. Place sausage on wide end of triangle and roll until fully wrapped, exposing the cut ends. Place on prepared baking sheet. Combine egg and water and brush each piece lightly with egg wash. Bake for about 15 minutes or until golden brown. Transfer to paper towel lined plate and allow to cool for 5 minutes. Serve warm with dipping sauce. Yields 12 servings.
