Quadruple Chocolate Cupcakes
Ingredients
3 cups flour
1 1/2 tsp baking soda
2 1/4 tsp baking powder
1/3 cup cocoa
1 1/2 cup sugar
1 1/2 cup mayonnaise
2 tsp vanilla
1 1/2 cup milk
16 oz chocolate chips
Container of chocolate fudge frosting
Instructions
Preheat oven to 350 F. Line 24 muffin cups with paper liners. Mix flour, baking soda, baking powder, cocoa and sugar in large mixing bowl. Stir in mayonnaise and vanilla. Gradually add milk and blend with electric mixer until smooth. Add chocolate chips and blend thoroughly. Pour batter into prepared muffin tins and bake for 20 to 25 minutes. Let cool for 10 to 15 minutes and then remove from pan and place on wire rack to cool completely. Frost with chocolate icing. Makes 24 cupcakes.
