Nutty Mincemeat Muffins
Ingredients
1 1/2 cup flour
1/3 cup sugar
2 tsp baking powder
1/2 tsp salt
1/4 cup butter, softened
2 eggs, beaten
3/4 cup mincemeat
1/2 cup apple juice
1/4 cup walnuts, chopped
Instructions
Preheat oven to 375 F. Sift dry ingredients together in a medium bowl. Make a well in the center. In separate bowl, cream butter and add eggs, mincemeat, apple juice and beat well. Add to dry mixture and stir just enough to moisten. Gently stir in nuts. Spoon batter into greased muffin tins, filling about 2/3 full. Bake for 15 to 20 minutes or until done. Makes 12 servings.
