Marshmallow Brownies
These will be the richest brownies that you will ever make. I have found that one bag of mini marshmallows will suffice even though a pound is called for in the recipe.
Ingredients
1 cup butter
4 squares unsweetened chocolate
2 cups sugar
4 eggs
pinch of salt
1 1/2 cups flour
2 teaspoons vanilla extract
1 cup milk chocolate chips
1/2 cup butter
4 squares unsweetened chocolate
1/3 cup cream
4 cups powdered sugar
1 teaspoon vanilla extract
dash of salt
1 pound mini marshmallows
Instructions
Preheat oven to 350 F. In a large saucepan, melt 1 cup butter and 4 squares chocolate over medium heat. Remove from heat and add sugar, then add eggs one at a time, beating well after each addition. Add salt, flour, vanilla, and chocolate chips, mixing well. Pour mixture into a well greased 12x15 inch sheet pan. Bake for 25 minutes. Remove from oven and sprinkle the top evenly with mini marshmallows until completely covered. Return to oven for 3 to 5 minutes until marshmallows are super soft, but not brown or crusty. Gently press down on marshmallows to fill in any possible gaps, spreading evenly over the top of the brownies. Set aside to let cool. In a medium saucepan, melt 1/2 cup butter, 4 squares unsweetened chocolate and cream until smooth. Add powdered sugar, vanilla extract, and salt, stirring until smooth. Pour over cooled brownies, spreading as necessary to cover the top of brownies. Let frosting set and come to room temperature before cutting. Makes 48 servings.
