Fresh Blueberry Cobbler
Ingredients
1/2 cup sugar
1 tablespoon cornstarch
4 cups blueberries
2 tablespoons water
1 teaspoon lemon juice
1 cup Bisquick
1/4 cup milk
1 tablespoon sugar
1 tablespoon butter, melted
Instructions
Preheat the oven to 425 F Mix 1/2 cup sugar and the cornstarch in a 2-quart saucepan. Stir in blueberries, water, and lemon juice. Heat over medium heat to boiling, stirring constantly, and boil for 1 minute. Pour blueberry mixture into an ungreased 2-quart casserole dish. Mix remaining ingredients in a small bowl until soft dough forms. Drop dough by tablespoonfuls onto the hot blueberry mixture. Bake for 15 minutes or until golden brown. Makes 9 servings.
