Crockpot Mashed Potatoes
Ingredients
5 pounds potatoes
8 ounces cream cheese
1 cup sour cream
1 cube chicken bouillon
1 teaspoon garlic powder
1 tablespoon dried parsley
Instructions
Wash and peel the potatoes. Cut into chunks and place in a large pot. Cover completely with water. Bring the potatoes to a boil over medium high heat, and boil rapidly for 20 to 25 minutes or until potatoes are fork tender. Using a measuring cup, scoop out 1/2 cup of water from the pot and then place bouillon cube in the water. Drain the potatoes and return to the pot. Put the cream cheese and the sour cream into the pot. Pour in the water containing the bouillon cube, then add the parsley and garlic powder. Using a potato masher or a blender, cream the potatoes until well blended. Scoop the potatoes out of the pot and place in a greased 5 quart crock pot. Cook on high for 2 hours or on low for 4 hours. Makes 12 servings.
