Double Baked Fries with Garlic Cheese Sauce and Bacon
Ingredients
6 medium potatoes2 tbsp Olive Oil, divided

Pepper
1 tbsp chili powder
2 tsp paprika
1/4 tsp cayenne pepper
1 garlic clove, grated
1 tsp olive oil
2 garlic cloves, minced
2 oz cream cheese
1/3 cup Greek yogurt
1/2 cup Cheddar Cheese, grated
1/4 cup milk
1 tsp seasoned salt
1/2 tsp pepper
2 tsp hot sauce
6 slices bacon, cooked and crumbled
4 green onions, sliced
Instructions
Preheat oven to 400 F. Line two baking sheets with parchment paper. Cut each potato into thin french fries no more than a 1/4 inch thick. In a large bowl, toss the fries with olive oil. Season with salt and pepper, then arrange the fries in a single layer on the baking sheets. Roast the fries for 30 minutes. Remove the fries from the oven and increase the heat to 425 F. Place the fries in the large bowl, and carefully toss the fries with the chili powder, paprika, cayenne pepper and garlic. Place the fries on a wire rack sprayed with cooking spray inside the baking sheet and bake for another 15 to 20 minutes until very crisp and brown.Heat 1 teaspoon olive oil in a small sauce pan. Saute 2 garlic cloves for 30 seconds and add the cream cheese and Greek yogurt. Whisk until the cream cheese has melted into the yogurt and the sauce is smooth. Reduce the heat to low, add cheddar cheese, whisking until melted. Add the seasoned salt and pepper to the sauce. Add 1 tablespoon of milk at a time until you reach the desired consistency. Remove from heat and stir in hot sauce.
Remove the fries from the oven and place in a large bowl. Top fries with bacon and green onions. Serve with cheese sauce drizzled over the fries. Makes 12 servings.
