Honey Mustard Mozzarella Chicken
4 skinless, boneless chicken breast halves
3/4 cup honey
1/2 cup mustard
Lemon pepper to taste
4 slices of bacon, cut in half
1 cup shredded Mozzarella Cheese
Preheat oven to 375 F. Place the chicken breast halves in a baking dish lined with parchment paper. Combine the honey and mustard in a bowl and blend well. Drizzle evenly over the chicken breasts. Sprinkle with lemon pepper. Bake for 25 minutes. Pull the chicken out of the oven and top each breast with 2 bacon slice halves and sprinkle evenly with cheese. Continue baking chicken for another 10 minutes or until chicken juices run clear, bacon is crisp and cheese is bubbly. Makes 4 servings.
