Jam Bars
This recipe has endless variations. Substitute coconut oil for butter, whole wheat pastry flour for all purpose flour and reduced sugar versions of jelly. Peach jam was the listed ingredient, but you can use any flavor.
Ingredients
3/4 cup butter, melted
1 cup all purpose flour
2 cups rolled oats
1/3 cup brown sugar
1/2 teaspoon salt
10 - 12 ounces jam
Instructions
Preheat oven to 350F and coat an 8 inch square baking dish with cooking spray. In a large bowl, combine butter, flour, oats, brown sugar and salt. Press about 3/4 of the oat mixture into the prepared pan and bake for 10 minutes. Remove from oven and gently dollop and spread jam onto crust. Sprinkle remaining oat mixture over top of jam. Return dish to oven and bake for 20 - 25 minutes. Allow bars to cool completely before slicing and serving. Placing them in the refrigerator after they have cooled will allow them to firm up well and make it easier to slice. Makes 12 servings.
