Banana Bread Buttermilk Pancakes
Adding the water made the batter a little thin. These tasted great and will definitely make them again.
Ingredients
1 ripe banana, mashed
1 egg, beaten
1 1/4 cups buttermilk
2 tablespoons butter, melted
1 teaspoon vanilla
1 1/4 cups flour
1/4 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
1/4 cup water
Instructions
Preheat a grille to 350 F. Combine the banana, egg, buttermilk, melted butter, and vanilla in a large mixing bowl. Beat at medium speed of an electric mixer for 30 seconds. Add flour, sugar, baking soda, and salt to the mixture, folding in by hand until wet and dry ingredients are incorporated. The batter should be thick. Fold in 1/4 cup water. Grease the griddle and pour 1/3 cup of batter onto it. Cook the pancake for 2 to 3 minutes or until bubbles form. Turn the pancake over and cook for an additional 2 minutes or until pancake is done. Serve with freshly sliced bananas, cinnamon or powdered sugar. Yields 8 pancakes. .
