Autumn Pear Bread
This recipe made 3 loaves the first time that we prepared it, and they were perfect. I may try just making two next time, but I am fearful that the batter will spill out over the pans and make a mess. It is not enough to make four loaves, because the loaves would be too thin.
Ingredients
2 cups flour1 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/8 teaspoon nutmeg
1/2 cup butter, cold
2 large eggs, room temperature
1/4 cup buttermilk
1 teaspoon vanilla extract
1 cup finely chopped peeled ripe pears
Instructions
Preheat oven to 350 F, and grease two 5 3/4x3x2 inch loaf pans. In a large bowl, combine the flour, sugar, baking powder, baking soda, salt and nutmeg.Cut in butter until mixture resembles coarse crumbs. In a separate bowl, combine the eggs, buttermilk, and vanilla. Stir into the flour mixture just until moistened, then fold in pears. Spoon into prepared pans. Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely. Yields 16 servings
