Old Fashioned Biscuit Pudding
After you have poured the pudding into the dish, you can also cover with plastic wrap and place it in the refrigerator, letting the mixture soak for 8 hours until ready to bake.
Ingredients
4 leftover biscuits
2 cups milk, divided
1 cup sugar
4 large eggs
2 tablespoons butter, melted
1 teaspoon vanilla extract
Instructions
Preheat the oven to 350 F and grease a 9x9 inch baking dish. Tear or cut the biscuits into small pieces and place in a large mixing bowl. Pour 1 cup of milk over the biscuits and let stand for 10 minutes or until biscuits have softened. With a fork, stir in the sugar and one of the eggs, mixing to blend well. Add the remaining eggs, one at a time, mixing well after each addition. Add the butter, vanilla, and the remaining milk and blend well. Pour the mixture into the prepared baking dish. Bake for 40 to 50 minutes or until the pudding is firm and set. A knife inserted into the center should come out clean. Let the pudding cool, and cut into squares. Makes 9 servings.
