Leah's Favorite Roasted Carrots
Ingredients
2 tablespoons Canola Oil
1 teaspoon chili powder
1 teaspoon ground cumin
1/2 teaspoon salt
2 pounds carrots, cut into diagonal slices
2 tablespoons cilantro, chopped
2 tablespoons lime juice
Instructions
Position rack in lower third of oven. Preheat oven to 450 F. Combine oil, chili powder, cumin and salt in medium bowl. Add carrots and toss well to coat evenly. Spread on a baking sheet lined with parchment paper. Roast the carrots for 20-25 minutes or until golden. Mix the cilantro and lime juice in a medium bowl. Place the carrots in the lime juice mixture and stir to coat evenly. Makes 8 servings.
