Caw's Cornbread Muffins
Ingredients
1 cup yellow cornmeal1 cup flour
1/4 cup sugar
1 tablespoon baking powder
1 teaspoon salt
2 eggs
12 ounces corn, drained
1 1/4 cups milk
1/4 cup vegetable oil
Instructions
Preheat oven to 425 F. Grease muffins tins with cooking spray and set aside. In large bowl, mix cornmeal, flour, sugar, baking powder and salt. In small bowl, beat eggs with fork, then add corn, milk and oil. Add to flour mixture and stir until well mixed. Pour into muffin tins. Bake for 20 minutes or until golden brown. Makes 15 servings.Can also be baked in a greased 8x8 baking dish for 35-45 minutes.
