Easy Roasted Vegetables with Honey and Balsamic Syrup
Ingredients
1/2 pound brussels sprouts, halved
1/2 pound carrots, sliced
1/2 pound small new potatoes, halved (white & purple)
2 large shallots, quartered
3 tablespoons olive oil, divided
3/4 teaspoon salt
1/2 teaspoon ground black pepper
2 tablespoons balsamic syrup
1 tablespoon honey
Instructions
Preheat oven to 425 F. Line a baking sheet with aluminum foil. In a large bowl, combine brussels sprouts, carrots, potatoes, and shallots with 2 tablespoons of olive oil, kosher salt and black pepper. Toss vegetables to coat thoroughly. Transfer the vegetables to the baking sheet and roast for 30 minutes or until tender and caramelized. Place roasted vegetables back in bowl, and add remaining olive oil, balsamic syrup, and honey. Toss vegetables again to coat evenly. Taste and season with more salt if necessary and serve. Makes 4 servings.
