Smashed Yams with Pecan Maple Crust
Ingredients
3 pounds yams
3/4 cup cream
1/4 cup maple syrup
1/4 cup unsalted butter
1 tablespoon salt
5 tablespoons butter
1/3 cup brown sugar
1/2 cup pecans, chopped
Instructions
Preheat oven to 375. Wrap yams in foil and bake on a sheet pan for one hour or until soft. Let cool and then peel. Transfer to a bowl and mash. Simmer cream and syrup in a large sauce pan, Add 1/4 cup butter and stir until completely melted. Add salt and butter mixture to yams and stir together. Combine 5 tablespoons butter and brown sugar in food processor and pulse 5 to 10 times. Transfer to a small bowl and add pecans. Put yams in greased 9x13 pan and smooth top. Dot with pecan mixture and bake for 15 minutes, then broil for 1 to 3 minutes. Serves 12.
