Breakfast Sausage Burritos
These are a simple and tasty breakfast burrito that can be frozen or refrigerated to be eaten at a later date. We made these at Taco Delite....
Ingredients
10 6-inch flour tortillas
8 oz ground pork sausage
6 eggs
2 tablespoons water
1/2 cup shredded Colby Jack Cheese

Instructions
Wrap tortillas loosely with aluminum foil and place in an oven at 250 F for 10 minutes. Cook sausage in a large skillet over medium heat, stirring often until sausage is no longer pink. Remove sausage from skillet and drain, patting dry with paper towels. Wipe skillet clean and coat with no-stick cooking spray. In a medium bowl, whisk together eggs and water then pour into prepared skillet. Cook the eggs over medium heat, stirring occasionally until eggs are thickened but still moist. Spoon the sausage and eggs evenly onto the 10 tortillas, topping with cheese. Roll up tortillas and serve with salsa. These can be wrapped in aluminum foil or saran wrap and placed in a Ziploc bag to be refrigerated or frozen. Makes 10 servings.
