Cheese Grits Casserole
These are fantastic served with a pork loin. Even though I am not a huge grits fan, these will be a go to side dish.
Ingredients
2 1/4 cups whole milk
2 1/4 cups water
1 teaspoon salt
1 cup quick cooking grits
8 ounces Velveeta, cubed
8 ounces Sharp Cheddar Cheese, cubed
1/4 cup butter
1/8 teaspoon garlic powder
2 eggs, beaten
Instructions
Preheat oven to 350 F and grease a 9x12 inch baking dish. Bring milk, water, and salt to a boil in a large saucepan. Gradually sprinkle grits into the boiling liquid, stirring to combine. Continue to cook over medium heat until thickened, about 5 minutes. Stir Velveeta, Cheddar Cheese, butter, and garlic powder into grits, stirring until cheese has melted. Let the mixture cool for 15 minutes, and then stir beaten eggs into grits. Transfer grits to prepared baking dish and bake for 45 minutes until top is a light golden brown and the grits are set. Makes 12 servings.
