Maple Pecan Corn Bread with Maple Butter
Ingredients
1 cup cornmeal1 cup flour
1/2 tsp salt
1 tsp baking powder
1 tsp baking soda
3 tbsp butter, softened
2 tbsp brown sugar
3 eggs
3/4 cup buttermilk
1/3 cup maple syrup
1 tsp maple flavoring
3/4 cup pecans, chopped
1/2 cup butter
1 tbsp maple syrup
1 tsp maple flavoring
Instructions
Preheat oven to 350 F. Grease an 8 x 8 inch baking pan. In a small mixer bowl, combine cornmeal, flour, salt, baking powder and baking soda. In a large mixing bowl, combine butter, brown sugar and eggs. Beat at medium speed for 2 minutes. Add buttermilk, maple syrup and maple flavoring. Continue beating at medium speed for 3 minutes. Reduce speed to low and add flour mixture. Continue beating for 2 minutes, making sure to scrape sides of bowl to mix all ingredients. Stir in pecans by hand. Spoon mixture into prepared pan. Bake for 25 to 30 minutes or until toothpick inserted in center of bread comes out clean.To prepare maple butter, combine butter, maple syrup and maple flavoring, Beat at medium speed for 3 minutes or until fluffy. Serve with warm cornbread. Makes 9 servings.
