Farmer's Casserole
Ingredients
6 cups frozen shredded hash brown potatoes
1 1/2 cup Monterey Jack cheese, shredded
2 cup cooked ham, diced
4 green onions, sliced
8 eggs, beaten
2 12 ounce cans evaporated milk
1/4 teaspoon salt
1/2 teaspoon pepper
Instructions
Coat a 12" Dutch Oven with non-stick cooking spray or line with Dutch Oven liner. Arrange hash browns evenly in the bottom of the oven. Sprinkle with cheese, ham and green onions. In a bowl, combine eggs, milk, salt, and pepper. Pour egg mixture over potatoes. Bake for 45 minutes to 1 hour or until it tests done, replacing coals as needed. Makes 12 servings.
