Taco Lasagna
Ingredients
1 pound ground beef
1/2 cup green pepper, chopped
1/2 cup onion, chopped
2/3 cup water
1 package Taco Seasoning Mix
15 ounce can Black Beans, rinsed and drained
14.5 ounce can Mexican diced tomatoes, undrained
6 8 inch flour tortillas
16 ounce can refried beans
3 cups Mexican cheese, shredded and divided
Instructions
In a large skillet, cook the beef, green pepper and onion over medium heat until meat is no longer pink and drain. Add water and taco seasoning and bring to a boil. Reduce heat and simmer for 2 minutes. Stir in the black beans and tomatoes. Simmer, uncovered for 10 minutes. Preheat oven to 350 F. Place two tortillas in a greased 9 x 13 inch pan. Spread with half of the refried beans, half the beef mixture and 1 cup of cheese. Repeat layers. Top with remaining tortillas and cheese. Cover and bake for 25-30 minutes or until cheese is melted. Yields 9 servings.
