Buttermilk Cupcakes
Ingredients
1 2/3 cup all-purpose flour
3/4 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter, melted and slightly cooled
1 cup sugar
2 large eggs
1 cup buttermilk
2 1/2 teaspoons vanilla extract
Instructions
Preheat oven to 350F and line 16 muffin tins with paper liners. In a medium bowl, combine flour, baking powder, baking soda, and salt and set aside. In a large bowl, whisk together butter and sugar. Whisk in eggs, buttermilk, and vanilla extract, mixing well. Add the dry ingredients to the sugar mixture in three addition, stirring until combined. Scoop batter into prepared muffin cups. filling each about 2/3 full distributing batter evenly. Bake 15 to 20 minutes, or until the cupcakes look just set and the top of the cupcake springs back when pressed gently. Let cool for 10 minutes, and then transfer cupcakes from the muffin tins to a rack to cool completely. Frost with the icing of your choice. Makes 16 servings.
