Baked Ranch Chicken Thighs
Ingredients
6 chicken thighs, about 2 pounds
salt and pepper to taste
1 packet dry ranch salad dressing mix
2 tablespoons olive oil
1 tablespoon lemon juice
1 tablespoon water
1 garlic clove, pressed
Instructions
Preheat oven to 400 F and line a 9x13 inch dish with foil. Season the chicken on both sides and place the chicken in the dish with the fattest side up. Bake for 25 minutes or until chicken starts to crisp. In a small bowl, combine the dressing mix, olive oil, lemon juice, water, and garlic. Brush the cooked chicken with the mixture and return to the oven to cook for another 15 minutes or until crispy and golden brown. Makes 6 servings.
