Buttermilk Corn Muffins
Ingredients
1 3/4 cup cornmeal
1 cup Bisquick
1/3 cup sugar
1/2 cup butter, melted
1 cup buttermilk
1 tsp baking soda
2 eggs, slightly beaten
Instructions
Heat oven to 400 F. Grease 12 muffin tins with non stick spray. In a large bowl, stir all ingredients together until well blended. Divide batter evenly among all muffin tins, filling each about 3/4 full. Bake for 14 to 17 minutes or until golden brown. Cool for 5 minutes and remove from pan to wire rack. Makes 12 servings.
