St. John's Jello Cake
Ingredients
1 yellow cake mix
3/4 cup oil
4 eggs
1 cup boiling water
3 ounce box Jell-O (lime, orange, cherry, etc.)
1 1/2 cup confectioners sugar
3 tablespoons lemon juice
Instructions
Preheat oven to 350 F. Dissolve Jello in 1 cup boiling water and cool. Mix cake mix and oil. Add eggs one at a time. Add dissolved Jell-O and mix well. Pour into greased 9x 13 inch baking pan. Bake for 30 - 35 minutes. Mix confectioners sugar and lemon juice to make glaze. Prick cake with fork and pour glaze over hot cake, spreading with the back of a spoon. Cool before cutting. Makes 20 servings.
