Strawberry Mousse Pie
Ingredients
1 packet unflavored gelatin
1/4 cup cold water
2 cups strawberries, hulled and sliced
1/4 cup sugar
1 cup heavy cream, chilled
3 tablespoons powdered sugar
1 9 inch Graham Cracker Pie Crust
Instructions
Sprinkle gelatin over cold water in saucepan. Let stand 1 minute to soften. Stir over low heat until gelatin is dissolved, about 1 minute, and remove from heat. Place strawberries, sugar and gelatin mixture in a food processor or blender. Whirl to puree, and then pour into a bowl. Chill for 1 hour. Beat cream and powdered sugar in a chilled bowl until soft peaks form. Stir 1/4 cup of cream mixture into strawberry puree to lighten mixture. Fold in remaining cream and then pour into crust. Refrigerate for 2 hours before serving. Makes 8 servings.
