Jane's Blueberry Oat Muffins
These are some of the best blueberry muffins I have ever tasted. They are simple to fix and disappear quickly once made.
Ingredients
1 cup oats
1 cup buttermilk
1/2 cup whole wheat flour
1/2 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup brown sugar
1 egg, beaten
1/4 cup butter, melted
1 cup blueberries
Instructions
Preheat the oven to 400 F and grease a 12-cup muffin tin. Combine oats and buttermilk in a small bowl and let stand while you get everything else ready. Combine flours, baking powder, baking soda, salt, and sugar in another mixing bowl and stir well to blend. Make sure that the brown sugar lumps are broken up in the mixing. Add egg and melted butter to oat mixture, and stir until well combined. Add oat mixture to dry ingredients and stir together until all are moistened. Gently fold in blueberries. Distribute mixture evenly among prepared muffin tins and bake for 17 to 22 minutes or until tops spring back when lightly touched. Makes 12 muffins.
