Corn Dog Muffins
Ingredients
1 1/3 cup all purpose flour
1 cup yellow corn meal
6 tablespoons sugar
2 tablespoons baking powder
1 1/2 teaspoons salt
4 tablespoons olive oil
4 eggs
2 cups milk
2 tablespoons brown sugar
9 Hot Dogs, diced
1 cup grated cheese
Instructions
Preheat oven to 400 F. Lightly grease mini muffin tins. Put all ingredients into a large bowl, and stir together well. Spoon into greased muffin tins. Bake for 10-12 minutes or until golden brown. Let cool for 10-15 minutes in pan and then remove or turn out on a large cutting board. They should slide right out. Makes 60 mini muffins.
