Apple Butter Bread Pudding
Ingredients
1/3 cup raisins
1 cup apple butter
6 croissants, split
8 large eggs, room temperature
3 cups milk
1 1/2 cups sugar
2 teaspoons vanilla extract
1/4 teaspoon salt
1/2 cup flour
1/2 cup brown sugar
1/4 teaspoon salt
1/4 cup butter, cold
Instructions
Preheat oven to 350 F and grease a 9x13 inch baking dish. Place raisins in a small bowl, and cover with boiling water. Let stand for 5 minutes, drain, and set aside. Combine apple butter and raisins, then spread over croissant bottoms. Replace tops and cut each croissant into 3 pieces. Place in the prepared baking dish. In a large bowl, combine the eggs, milk, sugar, vanilla extract, and salt. Pour over the croissants, and let stand for 30 minutes or until bread is softened. In a small bowl, combine the flour, brown sugar, and salt. Cut cold butter into the mixture until it resembles coarse crumbs, and then sprinkle over the top of the pudding. Bake uncovered for 50-60 minutes or until a knife inserted in the center comes out clean. Serve warm and refrigerate leftovers. Makes 20 servings.
