Vegetarian Red Beans & Rice
Ingredients
1 pound dry red beans1 medium onion, chopped
1 small green pepper, chopped
2 stalks celery, chopped
3 garlic cloves, minced
2 14 1/2 ounce cans vegetable broth
2 cups water
1 teaspoon salt
1/2 teaspoon hot pepper sauce
3 to 4 cups prepared rice
Instructions
In a large pot over medium heat, place dry red beans. Fill pot with water, to within 2" from top of pot, making sure to fully cover beans with water. Bring mixture to a boil for 10 minutes. Remove from heat. Cover pot with lid and let stand for 1 hour. After 1 hour, drain beans and discard water.Place soaked beans in a slow cooker and add chopped onion, chopped green pepper and chopped celery. Add minced garlic, vegetable broth, water, salt and hot pepper sauce. Mix well until combined.
Cover and cook on low setting for 10 to 12 hours. To serve, place cooked rice on serving plates and spoon bean mixture over rice. If desire, rice may be stirred into bean mixture while still in slow cooker before spooning onto plates.
Serves 8.
