Cheesy Ham & Potato Casserole
Ingredients
3 tablespoons butter
1 small yellow onion, finely chopped
3 tablespoons flour
1 teaspoon sweet paprika
1 1/2 cup milk
2 cups cooked ham, diced
Salt
Black Pepper
2 1/2 pounds russet potatoes, peeled and sliced 1/4" thick
3 cups cheddar cheese, shredded
Freshly chopped chives
Instructions
Preheat oven to 375 F. In a medium saucepan, melt butter. Add onions and cook about 4 minutes or until onions are soft, stirring occasionally. Sprinkle flour and paprika over onions and cook for one minute, stirring constantly. While whisking, slowly pour in the milk. Bring to a simmer and continue to whisk until thickened, about 3 minutes. Stir in ham and season with salt and pepper. Layer half of the potatoes in the bottom of a 3-quart baking dish and season with salt and pepper. Spoon half the sauce over the potatoes, and sprinkle with 1 1/2 cups cheddar cheese. Layer the remaining potatoes, sauce, and cheese. Cover dish with foil and bake for 40 minutes. Remove foil and continue to bake for 25 to 30 minutes or until cheese is golden and bubbly. Sprinkle with chives before serving. Makes 6 servings.
