Apple Bread
Ingredients
1/2 cup butter
1 cup sugar
2 eggs
1 teaspoon vanilla
2 tablespoons yogurt, buttermilk or sour cream
2 cups apples, peeled and chopped
2 cups flour
1/2 teaspoon salt
3/4 cup pecans, chopped
2/3 cup raisins
1 teaspoon baking soda
2 tablespoons butter, melted
2 tablespoons flour
1 teaspoon cinnamon
2 tablespoons sugar
Instructions
Preheat oven to 350 F. Cream butter with sugar until light and fluffy. Stir in remaining ingredients, mixing until thoroughly blended. Grease and flour one 9 x 5 inch loaf pan. Pour the batter into pan. For topping, mix the remaining ingredients until crumbly and sprinkle over batter. Bake for 70 minutes or until knife inserted in center comes out clean. Refrigerate before slicing. This bread can be wrapped tightly and frozen for up to 4 months.
