Apple Cranberry Bake
Ingredients
6 Granny Smith Apples
1 pound fresh cranberries
1 cup brown sugar
2 tablespoons cornstarch
1/4 cup butter, melted
1 tablespoon vanilla
12 ounces apricot preserves
1/4 cup pecans, chopped
Instructions
Preheat oven to 375 F. Peel apples and cut into eighths. Place apples into greased 8 x 12 inch baking dish and cover with cranberries. Mix sugar and cornstarch in medium mixing bowl. Combine butter, vanilla and preserves with sugar mixture and blend well. Pour sugar mixture over fruit and sprinkle with pecans. Bake for 50 - 60 minutes. Can be served warm with ice cream as a dessert. Makes 12 servings.
