Lemon Blueberry Crumb Bars
Ingredients
1/2 cup butter
1 box yellow cake mix
2 eggs, divided
16 ounces cream cheese, softened
1/2 cup sugar
1 tablespoon lemon zest
3 tablespoons lemon juice
2 1/2 cups fresh blueberries
Instructions
Heat oven to 350 F. Line 13x9 inch baking pan with foil, with ends of foil extending over sides. Microwave butter in large microwaveable bowl on high 1 to 1 1/2 minutes or until melted. Add cake mix and 1 egg, beating with mixer until well blended. Press 2/3 cup of the mixture onto bottom of prepared pan. In a separate bowl, beat cream cheese and sugar until well blended and smooth. Add remaining egg, zest juice and mix well. Pour over crust and top with blueberries. Pinch small pieces of the remaining cake mix mixture between your fingers and press lightly into cream cheese layer. Bake for 55 - 60 minutes or until toothpick inserted in center comes outs clean. Cool completely. Use foil handles to lift dessert from pan before cutting into bars. Keep refrigerated.
