Drunk Chicken
Ingredients
8 chicken breasts, cut in half
8 chicken thighs
1 cup Flour
1 tablespoon Cajun Seasoning
1 Onion, sliced
1/2 cup butter
1 cup cooking sherry
1 cup honey

Instructions
Preheat oven to 375 F. In a pan, place 1/4 inch of water. Mix flour and seasoning. Roll chicken in flour mixture and place in prepared pan. For every layer of chicken, place a layer of an onion. Cover and cook for 1 hour. Remove from oven and cut up butter and spread over chicken. Mix sherry and honey in a small bowl, then pour over chicken. Cook uncovered for 1 1/2 hours, turning every 30 minutes until golden brown. Makes 8 servings. Gravy can be used for mashed potatoes.
