Banana Snack Cake
Ingredients
2 cups flour1 teaspoon baking soda
1/2 teaspoon salt
1 1/3 cups sugar
1/4 cup vegetable oil
2 eggs
4 ripe banans, mashed
2 teaspoons vanilla
1 cup buttermilk
8 ounces cream cheese, room temperature
1/2 cup unsalted butter, room temperature
pinch of salt
4 cups powdered sugar
1 1/2 teaspoons vanilla
Instructions
Preheat oven to 375 F. In a small bowl, whisk together flour, baking soda, and salt, then set aside. In a large mixing bowl, combine sugar and oil until combined well. Add eggs, bananas, and vanilla, beating well after each addition. Reduce mixer speed to low and add flour mixture in three additions, alternating with buttermilk. mixing until combined. Pour into a greased 9x13 inch baking pan, and bake for 28-30 minutes or until cake tests done. Cool completely.For the frosting, combine cream cheese, butter, and salt in a mixing bowl. and beat at medium speed until smooth. Reduce mixer speed to low, and add powdered sugar, mixing well. Add vanilla, and increase speed to medium-high, beating until light and fluffy. Spread on cooled cake. Leftovers should be covered with plastic wrap, and kept at room temperature or in the refrigerator for four days. Makes 18 servings.
