Creamy Cheesy Mashed Potatoes
2 pounds potatoes, peeled and cubed into 1 inch chunks
3/4 cup evaporated milk
1/4 cup butter
1 cup (4 ounces) cheddar cheese, shredded
ground black pepper
Place potatoes in large saucepan. Cover with water, and bring to a boil. Cook over medium-high heat for 15-20 minutes or until tender and then drain. Place potatoes in a mixing bowl and add milk and butter. Beat with a hand held mixer until smooth, and then stir in cheese. Season with salt and ground black pepper. May add chopped green onion, chopped parsley or crumbled bacon to potatoes as well. Yields 6 servings.
