JIFFY Corn Pancakes
Ingredients
8.5 oz package Jiffy Corn Muffin Mix
1 egg
2 tablespoons shortening, melted
1/2 cup milk
Instructions
Preheat griddle to medium heat, 350 F to 375 F. Grease lightly. Combine ingredients until large lumps disappear. Use 1/4 cup batter and pour onto griddle. When pancakes bubble around edge, turn over and cook until bottom is lightly browned. Makes 6-7 pancakes.
