Slow Cooker Chicken Cacciatore
Ingredients
6 chicken breasts, boneless and skinless
1 1/2 cups Chicken Broth
1/2 cup dry red wine
8 ounces fresh mushrooms, halved, quartered or sliced
1 large sweet onion, chopped
1 large Green Bell Pepper, chopped
2 cans Italian-style diced tomatoes
3 cloves garlic, peeled, minced, or pressed
1/2 teaspoon dried oregano
salt & pepper
Hot cooked rice or pasta
Instructions
Place broth, wine, mushrooms, onion, green pepper, undrained tomatoes, garlic and oregano in a slow cooker, stirring to combine. Rinse chicken breasts in cold water and trim fat, patting dry with a paper towel. Season well on both sides with salt and pepper. Place chicken on top of tomato mixture and cook on low for 7 hours or until chicken is cooked through. Shred chicken, mixing thoroughly and serve over rice or pasta. Makes 6 servings
