Apple Pear Coffee Cake
I used 1 pear and 1 apple the first time we made this, and that seemed to be the right amount of both fruits. This a light, crunchy coffee cake that is sure to please on Christmas morning.
Ingredients
1/2 cup butter, softened
1 cup sugar
2 large eggs
1 teaspoon vanilla extract
2 cups flour
3 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup sour cream
1 1/4 cup chopped apples
1/2 cup chopped pear
1 cup brown sugar, packed
1 teaspoon ground cinnamon
2 tablespoons butter, cold
1/2 cup pecans, chopped
Instructions
Preheat oven to 350 F and grease a 9x13 inch baking pan. In a large mixing bowl, cream butter and sugar until light and fluffy. Beat in eggs and vanilla. In a small bowl, combine flour, baking powder, baking soda, and salt. Add flour mixture to cream mixture alternately with sour cream. Fold in apples and pear, mixing until well combined. Pour into prepared dish. In a small bowl, combine brown sugar and cinnamon. Cut in butter until the mixture resembles coarse crumbs. Stir in pecans, then sprinkle over batter. Bake for 35-30 minutes or until cake tests done. Cool on a wire rack. Makes 20 servings.
