This is a hearty dish with plenty of spice. Can add shredded lettuce, chopped tomatoes, sliced ripe olives, and sour cream to the finished product if you like.
Ingredients
1/4 cup butter
1/4 cup flour
4 cups water
3 tablespoons chili powder
1 teaspoon garlic salt
1 pound ground beef
1 pound pork sausage
1/4 cup onion, chopped
1 cup refried beans
8 8-inch flour tortillas
12 ounces Monterey Jack Cheese, shredded
Instructions
In a large saucepan, melt butter. Stir in flour until smooth, and gradually add water. Bring to a boil, then cook and stir for 1 minute or until thickened. Stir in chili powder and garlic salt, and return to a boil. Reduce heat, and simmer uncovered for 10 minutes. In a large skillet over medium heat, cook the beef, the sausage, and the onion until the meat is no longer pink. Drain the meat and stir in the refried beans. Spread 1/4 cup of the sauce in a greased 9x13 inch pan. Over each tortilla, spread 1 tablespoon sauce, 2/3 cup of the meat mixture, and 1/4 cup of cheese. Roll up and place seam side down in the prepared dish. Pour the remaining sauce over the top and sprinkle with the remaining cheese. Bake uncovered at 350 F for 18 to 22 minutes or until bubbly and cheese is melted. Makes 8 servings.
