Honey Roasted Red Potatoes
Ingredients
1 pound red potatoes, diced
2 tablespoons onion, diced
2 tablespoons butter, melted
1 tablespoon honey
1 teaspoon dry mustard
pinch of salt
pinch of black pepper
Instructions
Preheat oven to 375 F. Lightly coat an 11 x 7 baking dish with nonstick cooking spray. Place potatoes in a single layer in prepared dish, and top with onion. In a small bowl, combine butter, honey, mustard, salt and pepper. Drizzle over potatoes and onions. Bake for 35 minutes or until tender, stirring halfway through cooking time. Makes 4 servings.
