Fresh Pineapple and Cheese Casserole
Ingredients
1 cup fresh pineapple, chunked
1 cup sharp cheddar cheese, shredded
1/2 cup sugar
3 tablespoons flour
3/4 cup RITZ crackers, crushed
1/2 cup butter
Instructions
Preheat oven to 350 F. Grease a 1 1/2 quart size baking dish. In a mixing bowl, mix sugar and flour together. Stir pineapple chunks into flour and sugar mixture. Place in greased baking dish. Sprinkle evenly with cheese. Add cracker crumbs and spread evenly over cheese. Drizzle melted butter over casserole. Bake for 35 minutes or until topping is browned and the edges are bubbling slightly. Remove from oven and cool for 10 to 20 minutes. Serve hot or at room temperature. Can be served as a side dish or as a dessert. Makes 4 servings
